A simple and supremely satisfying dessert, rice pudding is pure comfort in a bowl. It's easy to get there too! Just simmer white rice with whole milk, sugar, and a pinch of salt until the grains are tender, plump, and creamy, then stir in a little vanilla or almond extract while the pudding's still warm.

I've made it twice since, varying the amount of liquid, but it's still not right. I've made red chili many times and never had to add a roux or any sort of thickener. I was watching past episodes of 'Good Eats' off of my DVR and noticed that AB uses crushed up tortilla chips to thicken his chili.

Cook them together for a couple minutes then start pouring on the turkey juices and stock. If you end up short of liquid, the cooking liquid from any veggie you're cooking will thin AND add additional flavor. I always save the cooking liquid from potatoes and onions destined for creaming for this very reason. I don't measure the liquid I use.

Help with homemade potato soup that is too thin! - Home ...

There are about 3 gallons of soup. As potatoes tend to disappear after too much cooking, I am wondering if I should strain the soup, and only boil the liquid part of the soup to thicken it? How much of this thickener/roux should I make up, for that amount of liquid/soup? And, I would appreciate a good recipe for the thickener/roux.

How can I thicken a Lentil Soup Without Flour - General ...

Any suggestions how to thicken a delicious--but very thin---lentil soup a friend made for me. She filled it with some good veg (plus I have some freshly cooked okra to add, left from my lunch,) but it needs something to bulk up the broth. (I often add a dollop of sour cream to the top of soups, or a bit of yogurt.)

Runny blueberry pie question - Home Cooking - Pies - Chowhound

When I went to serve it, liquid juices oozed out of each slice and on to the plate - the blueberries were quite intact (i.e. not gelled together) but there was a puddle of purple juice at the bottom of the pie plate (which I promptly spooned over the homemade ice cream that we made with the pie). The next day, it was fine.

How to thicken braising liquid while keeping it pretty ...

I know of three ways to thicken my braising liquid to serve it as a sauce: 1) flour / roux 2) cornstarch 3) reduction. I don't like method #1 because it turns the liquid an ugly murky color that is just not appealing to me. #2 is similar to #1, plus the mouthfeel of cornstarch-thickened liquids isn't the best.

Thickening cream based sauce - Home Cooking - Chowhound

If I wait until the chicken is done, it takes too long to thicken the sauce (first, I sautee onion, garlic, then add white wine, then rest of liquids). My question is should I thicken the cream while the chicken cooks to hasten the final sauce? I also thought about a roux, but this sauce is supposed to be somewhat loose...nothing like an alfredo.

So, if you traditionally use 2 T. flour per cup of liquid, that would translate into 3/8 t. guar. Roughly. Guar doesn't break down like cornstarch when heated. Technically, guar requires no heat to thicken, but it takes quite a long time to hydrate, so heat is generally recommended. Guar clumps like crazy when added to liquid.
